About the Recipe
Ingredients
1 stick of salted butter (softened)
1/3 cup brown sugar
1/4 cup granulated sugar
1 teaspoon vanilla extract
1 egg
1 cup all-purpose flour
1 teaspoon baking powder
(I always wonder if I should use baking soda, but something about it puts me off)
A generous amount of good-quality dark chocolate chips — the darker, the better (just not Nestlé!)
Flaky sea salt, for topping
Preparation
Preheat your oven to 350°F (175°C).
In a mixing bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
Mix in the egg and vanilla.
Stir in the flour and baking powder until just combined.
Fold in the chocolate chips.
Use an ice cream scoop to portion the dough onto a baking sheet lined with parchment paper.
Just before baking, sprinkle each cookie with flaky salt.
Bake for 8–10 minutes, or until the edges are golden brown.
Let cool slightly — or eat warm.
(If you're eating them later, warm them for a few seconds first — trust me.)
